Meet Nicole Lofton

September 1, 2024

We caught up with the brilliant and insightful Nicole Lofton a few weeks ago and have shared our conversation below.

Nicole, thanks for joining us, excited to have you contributing your stories and insights. It’s always helpful to hear about times when someone’s had to take a risk – how did they think through the decision, why did they take the risk, and what ended up happening. We’d love to hear about a risk you’ve taken.

So, I’ve always been a bit of a risk taker and this day in 2016 was no different. I had been thinking about moving on from my full-time job for a long time but being single I knew that I needed to prepare, as best as I could, for my future as a possible entrepreneur. In 2016, I began to rent out my home so I could learn the process of how to make extra income and I began to think about adding a room addition for a roommate in the future, but I decided to build a tiny house instead. I even started making the Dark Chocolate Island Coconut Granola and one of my friends thought it was a popular brand so maybe I had a winner! I was able to get the company into a few stores between 2016-2022. while working a full-time job, but something was missing. and I knew that I needed to “figure it out”. It was close to the end of 2022; I knew that it was time to move on from my job and I did. I took a risk. People thought I was crazy. My family was unsure. All I had was a dream and a goal knowing that I would meet people along the way with years of wisdom and advice. I’ve made some mistakes, along this journey, but if you’re willing to stay quiet sometimes, I promise that you will hear every word a person has to say. Stay quiet sometimes and keep it moving!

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.

Just Good Clean Cookin is a baking and cooking company that provides all natural products and cooking for individuals and families. Our mission statement and motto are “Consistency over time, under pressure” which means that we are committed as a company to providing products and recipes that become sustainable components in the kitchens of people across the world!

Just Good Clean Cookin constantly strives to develop and create recipes today that will impact families tomorrow in a positive way. We keep our ingredients simple: organic oats, grade A and raw honey for our granola products. pure cane sugar for our gluten free and plant-based cookie products and great all natural flavorings. At our company, we use one sweetener in our granola without adding any additional sugars, sweeteners, or artificial ingredients.

Nicole was raised by her grandmother who was always “before her time” in any project that she pursued, and cooking was no exception. She made gardens grow, mowed grass, and tried to prune trees. She made wine and canned peaches. When she cooked in the kitchen, she made a story unfold and this is why you are reading Nicole’s story today. “You’ve gone from Grandma’s to Gourmet when you eat Just Good Clean Cookin”.

Learning and unlearning are both critical parts of growth – can you share a story of a time when you had to unlearn a lesson?

I think this is a good question to ask because when you have a passion for anything, particularly when it deals with healthy food products, you want to make everyone feel good and you hope everyone feels good after eating your products. I had to learn that consumer’s buy products out of familiarity and routine. Even if I feel my company’s products are fire, it’s going to take the world a minute to recognize the goodness in it That philosophy is true because as time goes on the atmosphere changes for you and you get in this rhythm of meeting people who believe in the healthy eating journey and they bring other people who believe and the fun goes on and on. As a business owner I had to learn to relax and enjoy the business and the rest will handle itself.

What’s the most rewarding aspect of being a creative in your experience?

I would say the most rewarding part of creating recipes is seeing “that look” after someone tastes your cooking. Their chewing and chewing and they get this expression on their face of trying to figure out what’s in it or how spicy it’s going to be. And then, it comes. The smile on that person’s face means someone loves that product and it’s so rewarding to create something that you can share and possibly change the life of an indiviual.
